Today was the day for more onion jam as I had run out and we use a lot of it in burgers. Also very nice with cheese. Thankfully I had onions already finely chopped in the freezer from my last preserving.
850g finely chopped onions ( I chopped them in the food processor)
250g white sugar
600g brown sugar
3c malt vinegar
2 tablespoons garlic seasoning
Dissolve sugar in the vinegar.
Add onions and seasoning. Simmer until almost all the liquid is evaporated. (You may wish to leave windows open as both the onion and vinegar have a strong smell) It took me about 1 1/2 hours.
Thoroughly wash glass bottles and lids in hot soapy water. Dry in the oven at about 75deg celsius.
Put the onion jam into the hot bottles.
Makes about 3 medium jars (very approximately 1 litre)
